    I really wish these knives were more durable because they have the potential to be my favorites. They’re lightweight, sharp, attractive, and comfortable to use. Unfortunately, I’ve had to return this one twice and the paring knife once due to breakage. Each time I need a replacement under warranty, I have to pay for shipping, which has become quite frequent. As shown in the photo, my latest knife has a chip in it; this could be dangerous if pieces end up in my food. I hope they find a way to enhance the strength and longevity of the blades. This purchase has been disappointing.

    As a chef with over ten years of experience using these knives, I’ve bought more than ten for both my staff and myself. They are incredibly sharp and are undoubtedly the best tools in my kitchen. However, they are delicate; they can break if not handled with care, so it’s essential to set them down gently. I also advise against using them on cheeses or thick, hard foods, as the porcelain can snap, which the instructions do caution against as well.

    This knife is incredibly sharp and maintains its edge for a long time. The handle is comfortable, and the blade shape is excellent for cutting and slicing. Additionally, it is very lightweight since ceramic is much lighter than steel.

    However, there are a few important considerations if you’re new to using a ceramic knife:
    1) The blade is thin and fragile. Compared to steel, ceramic is brittle, so you need to handle it with care to avoid nicks. It’s best not to use this knife on hard items or near bones.
    2) To protect the blade, keep it separate from other utensils. It should be washed on its own and stored in a knife block. Avoid putting it in the sink with other dishes or tossing it into a cutlery drawer without a blade guard. Handwashing is recommended, but it’s easy to clean.
    3) The wide blade is manageable, but food tends to stick to it. Unlike many santoku knives that have scallops to prevent sticking, this blade is too thin for that feature. The advantage is that the thin blade glides through most materials and produces a very clean cut.
    4) Sharpening ceramic is quite challenging due to the narrow edge angle, so most sharpening tools won’t work. You can’t use a steel or standard kitchen sharpeners; instead, you’ll need a high-quality sharpener designed specifically for ceramic knives. Fortunately, Kyocera offers free sharpening and minor blade repairs, with just the return shipping cost to California. The good news is that the edge stays sharper longer than steel knives, meaning less frequent sharpening is necessary.

    While it requires more care than steel knives, if you’re willing to accommodate a few limitations, this knife is a pleasure to use and impressively sharp right out of the box.

    This knife is incredibly sharp, but caution is essential. It’s quite brittle, so avoid any twisting motions while cutting, as it can chip or fracture easily. For instance, when cutting an avocado, don’t try to twist the knife to remove the seed; that could damage the blade. If you drop it, it will shatter like fine china.

    The Kyocera kitchen knife has an incredibly sharp edge. I own an older model, but this new version is noticeably sharper, even though the old one is still one of my favorites. It’s lightweight and works best for slicing proteins and softer vegetables. I’ve chopped carrots with it, and it handled that well. However, be cautious when using it on tougher items like turnips; if the knife gets stuck, avoid twisting it as that could snap the blade or damage the edge. It’s designed for straight cuts, so use it accordingly. The knife is easy to clean, doesn’t stain, and doesn’t retain food odors.

    Update: I’ve been using this knife for nearly a year now, and it remains incredibly sharp! There’s been no dulling, and I haven’t needed to send it for sharpening. It’s a daily staple in my kitchen, handling everything from boneless meat to fruits and vegetables. I appreciate how little maintenance it requires to keep the blade in top shape (just avoid cutting through bones). I’m excited to purchase a Chef’s version of the Kyocera ceramic knives because I love this santoku knife so much!

    As someone who typically prefers steel knives, I was pleasantly surprised by how sharp this knife is. I mainly use it for slicing vegetables and fruit, and it has proven to be a fantastic addition to my kitchen. I chose the black blade over the white one based on aesthetics, but the black zirconium oxide offers enhanced durability and undergoes an extra firing process, making it an even better choice.

    The knife is very lightweight, and the blade isn’t heavy at all. If you’re used to steel knives, it might take some time to adjust. It excels at cutting through vegetables and fruits, but I don’t recommend it for meat with bones, tough cuts, or anything hard. I’ve successfully used it to slice chicken breasts and thighs, as well as thin steak. To avoid chipping, I hand wash it and let it air dry on a microfiber cloth—definitely avoid the dishwasher!

    This is an excellent ceramic knife for anyone considering their first ceramic knife or looking to add to their collection. I use it daily alongside my steel knives, and so far, it hasn’t chipped and has maintained its edge well. My only concern is that the blade is more brittle and fragile compared to steel knives.

    This is my fourth Kyocera knife, and I keep returning to them because they slice through vegetables effortlessly. The ease with which this knife cuts is unmatched compared to my other knives, and I genuinely dislike cooking without it.

    The only drawback is that, being ceramic, all of my previous Kyocera knives have eventually broken. I tend to put them in the dishwasher and use them nearly every day, so they endure quite a bit of wear and tear. Each one has lasted about two years before breaking.

    Despite this, I still believe it’s worth the investment, especially if you frequently prepare vegetables, fruits, and herbs. The price is reasonable given the quality, and for me, cooking just isn’t the same without it.
